Meet The Owner

Hi, my name is Rachel Larson and I am the creator of Fika Coffee KC. It has been a lifelong dream of mine to own my own coffee shop and I am SO EXCITED that I finally get to share this dream with ya’ll! It has been a labor of love over the years and it brings me so much joy to share it with you.

A little about myself, I was born in Jamestown, New York, and moved to Kansas City when I was two years old. I lived in Kansas City until I moved to Stillwater, Oklahoma to attend Oklahoma State University. GO POKES! I graduated with a bachelor’s degree in Hospitality and Tourism Management and a minor in Entrepreneurship.

I have worked in the Hospitality industry since I was 14 years old. I have an adventurous soul which has allowed me to travel the world and live in Nanjing, China for a short while.

I am an extrovert and LOVE making new friends. Random things that bring me joy are moving my body, dancing, cooking, event planning, coffee (DUH), summer drives, and a beautiful patio I can enjoy a nice margarita.

Why Fika?

I know for me it is hard to prioritize rest. I think as a culture we have a hard time prioritizing rest. It is sad to me that the most common response to the question “How are you doing?” is “I am tired.”

One of the biggest opportunities I see is not just having Fika be our name but rather a mindset we can embody.

I hope that Fika will change the narrative and create peace and rest based on how we serve and interact with our customers, partner with companies, help support their needs, and build relationships in our community.

Favorite Swedish Tradition?

One of my favorite Swedish traditions growing up was every Christmas my family would gather and make Pepperkaker Cookies. Pepperkaker’s are a thin and crispy Swedish gingerbread. We often pair them with peppermint ice cream. YUMMM!

My family still gathers every year and I am excited to pass down this tradition to my kids someday.
